Potato Puff

Serve this easy souffle-like side dish with grilled meats and a fresh fruit salad.

Prep Time: 10 minutes

Cook Time: 45 minutes

Ingredients:

  • 3 eggs, separated
  • 2 cups refrigerated mashed potatoes, heated
  • 1/2 cup sour cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 tsp. salt
  • 1/4 tsp. white pepper
  • 1/2 tsp. dried basil leaves

Preparation:

Preheat oven to 350 degrees F. In large bowl, beat egg whites until stiff. In medium bowl, beat egg yolks until smooth and add warm potatoes. Fold in sour cream, cheese, salt, white pepper, and basil, then fold in the beaten egg whites.

Pour into 2 quart glass casserole and bake at 350 degrees for 40-45 minutes until puffed and brown. Serves 4
