Roasted Potatoes

This simple recipe is the perfect side dish for meatloaf, grilled steaks, or chicken entrees.

Prep Time: 20 minutes

Cook Time: 55 minutes

Ingredients:

  • 4 russet potatoes
  • 3 Tbsp. olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp. dried basil leaves
  • 1 tsp. dried thyme leaves

Preparation:

Scrub potatoes and cut into 1" chunks, leaving a piece of skin on each chunk. You can peel the potatoes if you like.

Pour olive oil into a heavy roasting pan. Add potatoes, onions, garlic, and seasonings, tossing with your hands to coat. Place in preheated 400 degree oven and roast for 45-55 minutes, turning once during cooking with spatula, until potatoes are tender inside and crisp and beginning to brown on the outside. Serves 6-8
