Seasoned Roasted Vegetables Recipes

Seasoned Roasted Vegetables is an easy side dish recipe for spring.

Prep Time: 10 minutes

Cook Time: 20 minutes

Ingredients:

  • 1 pound asparagus, trimmed
  • 2 red bell peppers, sliced
  • 1 pound small whole button mushrooms, trimmed
  • 1 envelope dry herb soup mix
  • 3 tablespoons olive oil

Preparation:

Preheat oven to 400 degrees F. Place vegetables on baking sheet. In small bowl, combine soup mix and olive oil; drizzle over vegetables and toss to coat. Bake at 400 degrees F. for 15-20 minutes until vegetables are crisp-tender. 4 servings
