Ambrosia Salad

Just about any combination of fresh (or canned!) fruit will work well in this simple side salad recipe.

Prep Time: 15 minutes

Ingredients:

  • 1 cup cubed pineapple (canned or fresh)
  • 1 cup halved strawberries
  • 1 banana, sliced
  • 2 Tbsp. powdered sugar
  • 1/2 cup coconut, toasted if desired
  • 1/3 cup orange juice

Preparation:

Layer half of fruits in serving bowl. Sprinkle with half of the powdered sugar and half of the coconut. Repeat layers, then top with remaining coconut. Pour orange juice over all, cover, and refrigerate at least 3 hours before serving. 5 servings
