Barley adds a wonderful dimension of texture and lots of nutrition to this creamy fruit salad recipe. You can use any fruit you'd like; strawberries and blueberries would be a great variation.

Prep Time: 15 minutes

Cook Time: 15 minutes

Ingredients:

  • 1 (15-ounce) can mandarin oranges, drained, reserving juice
  • 1/2 cup quick cooking barley
  • 1/4 tsp. salt
  • 1/2 cup water
  • 1-1/2 cups orange juice
  • 1 cup orange flavored yogurt
  • 1/2 cup heavy whipping cream
  • 2 tablespoons powdered sugar

Preparation:

Drain oranges, discarding juice. Combine barley, salt and water, and orange juice in medium saucepan; bring to a boil. Reduce heat to low; cover pan and simmer for 15-20 minutes until barley is tender. Drain if necessary.

Add yogurt and oranges to barley; let cool in refrigerator for 30 minutes. In small bowl, beat cream with powdered sugar until stiff peaks form; fold into cooled barley mixture. Cover and chill for at least 4 hours before serving. 6 servings
