Ingredients:
- 1 (15-ounce) can mandarin oranges, drained, reserving juice
- 1/2 cup quick cooking barley
- 1/4 tsp. salt
- 1/2 cup water
- 1-1/2 cups orange juice
- 1 cup orange flavored yogurt
- 1/2 cup heavy whipping cream
- 2 tablespoons powdered sugar
Preparation:
Add yogurt and oranges to barley; let cool in refrigerator for 30 minutes. In small bowl, beat cream with powdered sugar until stiff peaks form; fold into cooled barley mixture. Cover and chill for at least 4 hours before serving. 6 servings
