This delicious side dish rice salad recipe is packed full of apples, celery, raisins, almonds, and grapes.
Prep Time: 20 minutes
Ingredients:
- 1/2 cup chutney
- 1/4 cup oil
- 2 Tbsp. slivered toasted almonds
- 1 Tbsp. lemon juice
- 1 tsp. minced ginger root
- 3 cups cooked rice, cooled
- 1 red apple, unpeeled, chopped
- 1/2 cup chopped celery
- 1/2 cup golden raisins
- 1 cup green grapes
Preparation:
In small bowl, combine chutney, oil, almonds, lemon juice, and ginger root; mix until well blended. Combine remaining ingredients in large bowl and toss to mix. Drizzle with dressing and toss again. Cover and refrigerate for 1-2 hours before serving. 8 servings
