Key West Fruit Salad

If you can find key west lime juice, by all means use it in this dressing recipe. If not, plain lime juice works just fine.

Prep Time: 25 minutes

Cook Time: 2 minutes

Ingredients:

  • 2/3 cup sugar
  • 1/4 cup water
  • 2 Tbsp. lime juice
  • 1/4 cup orange juice
  • 1 Tbsp. lemon juice
  • 2 cups sliced strawberries
  • 2 cups seedless grapes
  • 2 cups chopped kiwi fruit
  • 2 cups chopped pineapple
  • 2 cup raspberries

Preparation:

In small saucepan, combine sugar and water. Bring to a boil, then reduce heat and simmer for 2 minutes, stirring frequently, until sugar dissolves. Remove from heat and cool 10 minutes, then add lime, orange, and lemon juices. Cool completely.

Place fruits except raspberries in large serving bowl and drizzle with dressing. Cover and refrigerate 1-2 hours. Top with raspberries just before serving. 8 servings
