Apricot Bavarian

This super easy four ingredient molded salad recipe is cool and refreshing.

Prep Time: 20 minutes

Ingredients:

  • 6-oz. pkg. apricot flavored gelatin
  • 2 cups boiling water
  • 1-1/2 cups sour cream
  • 1 tsp. finely grated lemon peel
  • 16-oz. can apricot halves
  • 1 cup toasted slivered almonds
  • 1 cup fresh raspberries
  • Mint sprigs

Preparation:

In a large bowl, combine gelatin and boiling water and stir until gelatin is completely dissolved. Add sour cream and lemon peel and mix well with wire whisk.

Remove apricots from can, reserving juice. Coarsely chop apricots and add to gelatin mixture along with reserved juice and toasted almonds.

Rinse a 6 cup mold or 9x9" square glass pan under cold water and shake out excess water. Pour gelatin mixture into mold. Cover and refrigerate 4-6 hours until firm. Unmold or cut into squares and serve with fresh raspberries and mint. 8 servings
