Honeydew Salad Wedges

This beautiful salad is so fun to make; gelatin is molded inside melon halves, then carefully sliced to form beautiful wedges.

Prep Time: 15 minutes

Ingredients:

  • 1 honeydew melon or cantaloupe
  • 3 oz. pkg. lemon or orange flavor jello
  • 1/2 cup boiling water
  • 1/2 cup ice water
  • ice cubes
  • 1 cup sliced strawberries or whole raspberries

Preparation:

Cut melon in half and scoop out seeds. Pat the inside of the melon dry using paper towels and set aside.

Dissolve gelatin in boiling water. Stir until no sugar particles are visible. Combine ice water and ice cubes to make one cup. Add to gelatin and stir until slightly thickened. Remove any unmelted ice.

Place each melon half in a small bowl to hold straight and even. Place half of strawberries in each melon half. Pour gelatin mixture over berries. Cover with plastic wrap and chill until firm, about 3 hours. To serve, cut into wedges. Serves 8
