Buffalo Potato Salad

Buffalo Potato Salad is a creamy and flavorful side dish perfect for cookouts.

Prep Time: 15 minutes

Cook Time: 40 minutes

Ingredients:

  • 2 (28-ounce) bag frozen steak fries
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1-1/2 cups blue cheese salad dressing
  • 1/2 cup Miracle Whip salad dressing
  • 1/2 cup plain yogurt
  • 1/4 cup milk
  • 1/3 cup crumbled blue cheese
  • 1 bunch green onions, sliced
  • 1 cup chopped celery

Preparation:

On large baking sheet, combine potatoes with olive oil, onion, and garlic; toss to coat and spread into single layer. Roast according to package directions.

Meanwhile, combine salad dressing, Miracle Whip, yogurt, milk, and blue cheese in large bowl; add celery and green onions.

When potatoes are golden brown and crisp, add to the salad dressing mixture, stirring gently to coat. Cover and chill for 3-4 hours before serving. Serves 10
