This delicious side dish salad is such a wonderful combination of textures and flavors; and it's so easy.

Ingredients:
- 1 cup sliced celery
- 15 oz. can black beans, drained and rinsed
- 4 plum tomatoes, sliced
- 1 yellow bell pepper, chopped
- 2/3 cup salsa
- 1/3 cup light sour cream
- 1 Tbsp. lemon juice
- butter lettuce leaves
Preparation:
Combine celery, black beans, tomatoes and peppers in salad bowl. In small bowl, combine salsa, sour crean and lemon juice. Pour over bean mixture and toss. Serve over lettuce. 4 servingsCalories: 300
