Gazpacho Salad

This delicious side dish salad is such a wonderful combination of textures and flavors; and it's so easy.

Prep Time: 10 minutes

Ingredients:

  • 1 cup sliced celery
  • 15 oz. can black beans, drained and rinsed
  • 4 plum tomatoes, sliced
  • 1 yellow bell pepper, chopped
  • 2/3 cup salsa
  • 1/3 cup light sour cream
  • 1 Tbsp. lemon juice
  • butter lettuce leaves

Preparation:

Combine celery, black beans, tomatoes and peppers in salad bowl. In small bowl, combine salsa, sour crean and lemon juice. Pour over bean mixture and toss. Serve over lettuce. 4 servings
