Mixed Greens and Pea Salad

This fabulous salad is so simple to make; yet it tastes so fresh and complex. Just thaw the peas; don't cook them. You want the crunch and sweet pop of flavor.

Prep Time: 15 minutes

Ingredients:

  • 10 oz. bag pre washed fresh baby spinach leaves
  • 10 oz. bag mixed baby greens
  • 1-1/2 cups frozen baby green peas, thawed
  • 1/3 cup olive oil
  • 1/4 cup lemon juice
  • 1 tsp. prepared mustard
  • salt and pepper to taste

Preparation:

Combine spinach, greens, and peas in salad bowl. In small bowl, combine olive oil, lemon juice, mustard, salt and pepper and whisk to blend. Just before serving, pour dressing over salad and toss gently to coat. Serves 4-6
