This fabulous salad is so simple to make; yet it tastes so fresh and complex. Just thaw the peas; don't cook them. You want the crunch and sweet pop of flavor.

- 10 oz. bag pre washed fresh baby spinach leaves
- 10 oz. bag mixed baby greens
- 1-1/2 cups frozen baby green peas, thawed
- 1/3 cup olive oil
- 1/4 cup lemon juice
- 1 tsp. prepared mustard
- salt and pepper to taste
