In a Hurry Potato Salad

Using frozen hash brown potatoes saves you all the time of peeling, cooking, and slicing whole potatoes. Use any veggies you like in this super easy potato salad. Green onions, radishes, and other bell peppers would be delicious.

Prep Time: 25 minutes

Cook Time: 10 minutes

Chilling time: 2 hours

Total Time: 2 hours, 35 minutes

Yield: 6 servings

Ingredients:

  • 3 Tbsp. olive oil
  • 6 cups frozen diced or shredded hash brown potatoes
  • 1/2 cup mayonnaise
  • 1/4 cup Miracle Whip salad dressing
  • 3 Tbsp. milk
  • 1/4 tsp. salt
  • dash white pepper
  • 3 Tbsp. mustard
  • 1 red bell pepper, chopped

Preparation:

Heat oil in heavy saucepan over medium heat. Add potatoes; cook and stir for 7-10 minutes, or according to package directions, until potatoes are thoroughly heated and beginning to crisp and brown.

Mix remaining ingredients except red bell peppers in large bowl. Fold in the hot potatoes and bell peppers, cover, and chill salad for at least 1 hour before serving.
