In a Hurry Potato Salad

Using frozen hash brown potatoes saves you all the time of peeling, cooking, and slicing whole potatoes.

Prep Time: 25 minutes

Cook Time: 10 minutes

Ingredients:

  • 2 Tbsp. olive oil
  • 5 cups frozen diced hash brown potatoes
  • 1/4 cup chopped green onions
  • 3/4 cup mayonnaise
  • 1/4 cup Miracle Whip salad dressing
  • 3 Tbsp. milk
  • 1/8 tsp. salt
  • dash white pepper
  • 3 Tbsp. mustard

Preparation:

Heat oil in heavy saucepan over medium heat. Add potatoes; cook and stir for 5-8 minutes until potatoes are thoroughly heated and beginning to crisp.

Mix remaining ingredients in medium bowl. Fold in the hot potatoes, cover, and chill salad for at least 1 hour before serving. 6 servings
