Canned vegetables get new life with this flavorful homemade salad dressing.
Prep Time: 20 minutes
Ingredients:
- 15 oz. can green beans, drained
- 15 oz. can peas, drained
- 15 oz. can corn, drained
- 1 red bell pepper, chopped
- 1 red onion, finely chopped
- 4 stalks celery, chopped
- 1 green bell pepper, chopped
- 1/2 cup vegetable oil
- 1 cup apple cider vinegar
- 3/4 cup sugar
- 2 Tbsp. water
- 1/8 tsp. pepper
- 1 tsp. dried thyme leaves
Preparation:
Combine vegetables in a large bowl. In a small bowl, combine oil, vinegar, sugar, water, pepper, and thyme and mix well. Pour over vegetables, and stir to coat. Cover salad and refrigerate for 4 hours or overnight before serving. Serves 8
