Vegetable Salad with Buttermilk Dressing

Vegetables marinate in a rich buttermilk dressing, then top crisp salad greens in this easy side salad recipe. Garlic chives are related to chives, but the leaves are flat, not hollow, with a mild garlic flavor.

Prep Time: 20 minutes

Ingredients:

  • 2/3 cup low fat mayonnaise
  • 1/2 cup buttermilk
  • 2 tablespoons chopped garlic chives
  • 1 tablespoon chopped fresh parsley
  • 1 red bell pepper, chopped
  • 1 pint cherry tomatoes
  • 1 cucumber, peeled, seeded, and chopped
  • 1 cup sliced mushrooms
  • 1/2 cup sliced radishes
  • 4 cups mixed salad greens

Preparation:

Combine mayonnaise, buttermilk, garlic chives, and parsley in small bowl. In large bowl, gently toss this salad dressing with remaining ingredients except salad greens; cover and refrigerate for 1-2 hours to blend flavors. When ready to serve, place greens in salad bowl and top with marinated vegetables; toss to coat. 4 servings
