And Tex-Mex, or Southwest, recipes can really warm you up on a cold night. The combination of flavors and spices is so wonderful. And when you are the chef, you can control the heat and spice level. When you're trying a new recipe, use the lower end of the spice measurements; you can always add more, but you it's very difficult to make the recipe more mellow.
