With colder weather here, my crockpot is getting a nice workout. Or I should say, my crockpots! I find it necessary to have five crockpots, of different sizes and shapes: a six-quart oval, two four-quart rounds, a 1-quart, and a 1-pint slow cooker. That will handle every crockpot recipe I can think of. Add some spicy ingredients for some fabulous crockpot Tex-Mex recipes.

Tex-Mex, or Southwest, recipes can really warm you up on a cold night. The combination of flavors, textures, and spices is so wonderful. And when you are the chef, you can control the heat and spice level. When you're trying a new recipe, use the lower end of the spice measurements; you can always add more, but you it's very difficult to make the recipe more mellow.
