Curried Chex Mix is a super easy snack mix that uses just five ingredients (well, if you count the cereals as one ingredient! And I use a multi-grain Chex cereal from Cascadian Farms, so I can!). You can certainly add pretzel sticks or other nuts or dried fruits to this recipe. And vary the curry powder according to the level of spiciness you like. If you like it hot, add more!

Prep Time: 10 minutes

Cook Time: 40 minutes

Total Time: 50 minutes

Yield: 26 1/2-cup servings

Ingredients:

  • 3 cups rice Chex
  • 3 cups wheat Chex
  • 3 cups corn Chex
  • 2 cups pistachios
  • 2 cups cashews
  • 1/2 cup butter
  • 1/3 cup olive oil
  • 1-3 tablespoons curry powder
  • 1 teaspoon ground ginger
  • 1/8 teaspoon pepper
  • Salt to taste, if desired

Preparation:

Preheat oven to 250 degrees F. In large bowl, combine Chex cereals, pistachios, and cashews. In small saucepan, melt butter and olive oil. Stir in half of the curry powder, all the ginger, the pepper, and salt, if using.

Drizzle butter mixture over cereal mixture, tossing to coat. Then sprinkle remaining curry powder over all, tossing to coat. Place on large cookie sheet or jelly roll pan with sides.

Bake for 40 minutes, stirring every ten minutes, until toasted and fragrant. Cool on paper towels, then store in airtight container at room temperature.
