Make sure that the filo is defrosted according to package directions. Open up the package and gently unwrap one roll. Have the extra butter melted, in a dish, with a pastry brush on hand. Place one sheet of the filo on the work surface and brush with butter. Repeat with another sheet of dough and more butter. Top with a third sheet, but do not butter. Cover the rest of the filo dough with a sheet of plastic wrap and a kitchen towel so it doesn't dry out.
