Gently roll the filling into the filo dough, using your fingers and palms to help. Roll to the end, then use some melted butter to seal the dough to itself. Brush the roll with more melted butter and place on a cookie sheet.

If you're going to freeze the rolls, here's when you do it. Place 1" apart on a cookie sheet and freeze solid. Then wrap in freezer wrap and place in hard-sided freezer containers. Label, seal, and freeze for up to 3 months. Baking the rolls frozen is the best option.
