This classic St. Patrick's Day menu is not only delicious, but easy too. I think that cooking corned beef in the slow cooker yields an excellent result. The meat is moist and tender, and well flavored from the long, slow cooking time.

Since corned beef is so strong, the mild cabbage and sweet carrots are the perfect complements. Slice the beef very thinly for the best taste and texture.

St. Patrick's Day Menu

  • Crockpot Corned Beef and Cabbage
    Believe it or not, this classic recipe uses just five ingredients! Be sure to save some of the corned beef for my new favorite sandwich: Corned Beef and Slaw Sandwiches.
  • Irish Soda Bread
    This wonderful recipe for the classic quick bread is moist and tender, and stuffed with raisins. Serve it warm from the oven with lots of butter, Irish butter if you can get it.
  • Irish Mint Brownies
    A creamy, minty, green filling elevates these brownies from the ordinary to the spectacular. They may not be 'classic' Irish, but they are delicious.
