Crockpot Wild Rice Stuffing

Crockpot Wild Rice Stuffing is delicious and easy. Make sure you buy long grain wild rice; never purchase short or broken grains or your stuffing will be mushy.

Prep Time: 15 minutes

Cook Time: 7 hours

Total Time: 7 hours, 15 minutes

Yield: 10-12 servings

  • 8 cups cubed whole wheat bread
  • 3 cups chicken or turkey broth
  • 2/3 cup uncooked wild rice
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 stalks celery, chopped
  • 1 cup dried cherries
  • 1/3 cup butter, melted
  • 1 teaspoon dried marjoram leaves
  • 1 teaspoon dried thyme leaves
  • 1 teaspoon salt
  • 1/8 teaspoon pepper

Preheat oven to 275 degrees F. Spread bread cubes on a large baking sheet. Bake for 15-20 minutes, turning once with spatula, until toasted. Set aside to cool.

In 4-5 quart crockpot, combine broth, wild rice, onion, and garlic. Cover and cook on high for 3 hours. Stir gently.

Add celery, cherries, butter, marjoram, thyme, salt, and pepper to crockpot and stir to coat. Add bread cubes and stir until coated. Be careful, because the crockpot will be hot.

Cover and cook on low for 4-5 hours longer or until the stuffing registers 160 degrees F.
