French Chocolate Pie

Be sure to only use pasteurized eggs in this wonderful recipe. You must beat each egg into the mixture for 5 minutes so the sugar dissolves.

Prep Time: 25 minutes

Cook Time: 10 minutes

Ingredients:

  • 1 9" pie crust
  • 1/2 cup butter, softened
  • 3/4 cup sugar
  • 1 oz. square melted unsweetened chocolate, cooled
  • 2 (1-oz.) squares melted semisweet chocolate, cooled
  • 1-1/2 tsp. vanilla
  • 2 pasteurized eggs
  • pinch salt
  • 1/2 cup whipping cream
  • 3 tablespoons powdered sugar

Preparation:

Blind bake and cool 9" single pie crust. Set aside.

In large bowl, cream butter and sugar together until light and fluffy. Blend in chocolates, vanilla, and salt. One at a time, add eggs, beating five minutes after each addition, a total of 10 minutes.

In small bowl, combine cream with powdered sugar and beat until stiff peaks form. Fold into chocolate mixture. Pour filling into pie shell and chill 4 hours before serving. 8 servings
