Mint Fudge Pie

This refreshing pie is excellent served after a summer dinner, or for a St. Patrick's Day celebration.

Prep Time: 25 minutes

Cook Time: 25 minutes

Ingredients:

  • 9" pie shell
  • 1/3 cup butter
  • 1/4 cup cocoa powder
  • 1 cup sugar
  • 2 eggs
  • 1/2 cup plus 1 Tbsp. flour
  • 1/2 tsp. baking powder
  • 1 tsp. vanilla
  • 1 cup mint chocolate chips
  • 2 cups mint chip ice cream
  • 1/2 cup hot fudge ice cream topping

Preparation:

Prepare pie pastry and set aside.

In heavy saucepan, combine butter with cocoa powder; melt over low heat. Add sugar and beat in eggs until combined. Then add flour, baking powder, and vanilla and stir until mixed. Stir in mint chocolate chips.

Pour brownie batter into pie shell. Bake at 350 degrees F for 25-35 minutes or until brownie mixture is set and edges of pie crust are golden. Cool completely.

Spoon mint chip ice cream into center of pie and drizzle with hot fudge topping. Freeze until ready to serve. Take out of freezer 20-30 minutes before serving time. Serves 8-10
