For almond lovers, this pie has a dense filling made of almond paste, topped with fresh strawberries and a strawberry glaze. Use Hot Water Pastry for the perfect crust. Yum.

Prep Time: 25 minutes

Cook Time: 40 minutes

Ingredients:

  • 1 9" pie shell
  • 7 oz. pkg. almond paste (NOT marzipan)
  • 1/4 cup powdered sugar
  • 2 Tbsp. butter, melted
  • 2 eggs
  • 3 pints fresh strawberries
  • 3 Tbsp. strawberry jelly

Preparation:

Preheat oven to 375 degrees F. Prepare pie shell and set aside. In food processor, crumble almond paste and add melted butter and sugar. Cover and process until mixed. Add eggs, cover, and process again until smooth. Pour into pie shell.

Bake at 375 degrees F for 35-45 minutes until filling is puffed and set. Let cool for 1 hour. Prepare strawberries and top pie. In small microwave safe bowl, place jelly and microwave on high for 40-55 seconds until melted. Spoon over strawberries. Serves 8
