Santa Fe Chicken Casserole

The weekends before Christmas are always so hectic. There are presents to buy and wrap, cards to address, and all the hustle and bustle of this time of year. But you still have to eat! You could just go to drive through windows of your local fast food establishment, but why spend the money and calories on food that isn't very good? Turn to these busy holiday menus and recipes from The Weekend Cook to get you through this weekend.

Crockpot recipes are always welcome; they are true fix-it-and-forget-it recipes; and the scent that wafts through your house is really wonderful. And recipes that use convenience foods can be ready to pop into the oven in just minutes and are hearty and delicious. You can choose from Make Ahead Recipes as well. Think about making twice the amount of your favorite casserole recipe and freezing one to bake on a really busy day.

As you decorate your house and finish your Christmas shopping (or maybe even start your shopping!) please take time to donate toys and food to those less fortunate. You'll make Christmas much brighter for some other little boys and girls.

Friday Night Supper

  • Santa Fe Chicken Casserole
I love this easy casserole. It takes about 10 minutes to put together, then bakes to creamy perfection in half an hour.
  • Simple Green Salad
This simple salad is a real star. You can make more of the delicious dressing and store it in your fridge for about two weeks.
  • California Gold Bars
These rich and not too sweet bar cookies are really wonderful and they take just minutes to make.

Saturday Breakfast

  • Mock Cheese Souffle
This simple make ahead recipe is very hearty and filling; perfect for a cold day. Make it the night before, then just bake and serve when you wake up.
  • orange juice, coffee, milk
  • Coconut Fruit Salad
This super simple salad is very refreshing. You can store the cans of fruit in the fridge overnight so they're cold when you open them.

Saturday Lunch

  • Baked Turkey Sandwiches
These delicious sandwiches are very easy to make. Use your favorite deli sliced cheese, or make a selection so your family has a choice.
  • baby carrots and celery sticks
  • milk
  • potato chips
  • Peanut Butter Marshmallow Treats
Have you ever added peanut butter to traditional rice krispy bars? These are really delicious; plus, there's a piece of candy in each bar!

Saturday Dinner

  • Slow Cooker Gingered Beef
Make this recipe right after breakfast and let it cook slowly all through the day.
  • Basil Parmesan Scones
Scones are very easy to make, and add such a wonderful touch to the meal. Make sure to serve them hot out of the oven with lots of butter.
  • Pomegranate Romaine Salad
Winter is the season for pomegranates; the edible jewel like seeds of this beautiful fruit are so delicious on crisp romaine leaves.
  • Apple Crisp
Sometimes old classic recipes are the best. This comforting dessert is wonderful served with butter pecan ice cream.

Sunday Brunch

  • Filo Sausage Egg Bake
You may be intimidated by filo dough; don't be! You just have to be a bit careful with the delicate dough. This recipe is spectacular, and should be made the night before.
  • Grapefruit Avocado Salad
This elegant salad uses just four ingredients. You can use your favorite salad dressing if you'd like; poppyseed dressing would also be good.
  • coffee, orange juice, milk
