With everyone home for the long holiday weekend, you may think you need to do a lot of cooking. Not with these recipes and menus! Dust off the grill if you haven't already, and enjoy the time off with family and friends.

And don't forget to take some time to honor the memory of those who have served our country. Fly your flag, attend a parade or two, and savor this delicious food.

Friday Night Dinner

  • Baked Omelet
Everybody has eggs and cheese on hand, so this super easy omelet is perfect for the end of a hard work week.
  • Creamy Lemon Salad Dressing
Served on a nice bagged salad. Making your own salad dressing is super easy and adds great flavor to bagged salads.
  • Strawberries with Chocolate Dip
Strawberries really are at their peak right now, so what better way to end the week than with this simple and luxurious dessert?

Saturday Breakfast

  • Fresh orange juice
  • Hot coffee
  • Ham and Egg Cups
These little cups are a meal in one - for breakfast! Use your favorite cheese in this super easy recipe.

Saturday Lunch

  • Wild Rice Sandwich Spread
A couple of sandwich spreads and a selection of breads and tortillas makes lunch a do-it-yourself buffet.
  • Spinach Pesto Spread
Add some sliced tomatoes, zucchini, and mushrooms to bread spread with this mixture for a fresh and delicious and healthy sandwich.
  • Potato chips
  • The Best Chocolate Chip Cookies
These cookies from my first cookbook are just perfect. They're tender, chewy, and crisp all at once.

Saturday Dinner

  • Pesto Chicken Packets
Use the fresh asparagus that's so delicious in the market right now in this easy recipe. You could add more vegetables too; I'd add sliced mushrooms and yellow squash.
  • Basil Cheese Breadsticks
These fabulous breadsticks start with a loaf of sourdough bread. You have to try these!
  • Chocolate Peanut Butter Ice Cream Pie
Use some Chocolate Chip Cookies from lunch to make the crust for this decadent and super-easy pie.

Sunday Brunch

  • Orange juice
  • Coffee
  • Stuffed French Toast Bake
If you can find other flavors of cream cheese, think about using them in this delicious recipe. Then offer a syrup made with the same fruit!
  • Honey Lime Fruit Salad Dressing
Served with green fruits, like grapes, kiwi, and honeydew melon.

Sunday Dinner

  • Caesar Chicken Salad
Marinate chicken breasts in Caesar salad dressing and grill them to top romaine lettuce; what a simple and brilliant idea.
  • Grilled Vegetable Kabobs
Your favorite spring and summer vegetables take on a sweet and smoky taste when cooked to perfection on the grill.
  • Strawberry Cream Dessert
This delicious and refreshing dessert is so easy to make, and it serves a crowd. You can freeze it, too, for a super-cold treat.

Monday Breakfast

  • Orange juice
  • Coffee
  • Dutch Pancake
Make a large puffy pancake in the oven and you won't have to stand at the stove flipping while everybody else is eating!
  • Apple Glazed Sausage and Bacon
The combination of flavors and textures in this simple recipe are simply superb.

Monday Lunch

  • All-American Burger
Whether you're grilling in your backyard or in a state park, this recipe is perfect for a satisfying lunch. Be sure to have ripe tomatoes and crisp lettuce on hand!
  • Carrot Pineapple Freeze
This make-ahead salad is perfect for a picnic. Freeze individual portions in muffin paper liners for a portable treat.
  • Crispy Skillet Cookies
I love these old-fashioned cookies with the crisp and creamy texture. Save some for school lunchboxes on Tuesday.

Monday Dinner

  • Grilled Garlic Steak Salad
There's something so satisfying about hot and cold salads. You can add any vegetable you'd like to this easy recipe.
  • Grilled Cheese Bread
Three kinds of cheese make this fabulous bread delicious, a perfect complement to the salad.
  • Marinated Fruit Salad
I love this fresh, sweet, and healthy salad. Use your favorite fruits.
  • Grilled Pineapple
If you haven't tried grilled pineapple, now is the time! It's sweet, smoky, juicy, and delicious.
