Best Fall Crockpot Recipes

The Top Ten

By

I always know when it's fall; I start craving crockpot recipes! These comforting and easy recipes are fabulous for cool fall evenings. And best of all, as schedules get crazy with the new school year, knowing that dinner is ready and waiting for you at home is wonderful! Remember, you can change these recipes any way you'd like. Substitute ham for chicken in the Wild Rice Casserole. Use meatless crumbles instead of ground beef in Classic Chili. And enjoy!

1. Crockpot Honey Chicken and Dried Fruit

This fragrant and flavorful recipe is a real winner. The dried fruit softens and turns into a chutney as the chicken cooks to tender perfection. Serve this recipe over lots of hot cooked brown or wild rice for the perfect fall meal.

2. Classic Chili

This is the recipe my mom used to use when I was growing up. I think it's perfect; the best ratio of meat to beans to vegetables to tomatoes. You can make it spicier if you'd like by adding some minced or chopped jalapeno peppers toward the end of cooking time (because cooking makes the peppers milder) or more cayenne pepper. Serve with sour cream, a sprinkle of Parmesan cheese, and my fabulous Cheese Crackers.

3. Crockpot Chicken Wild Rice Casserole

This comforting and delicious casserole is a real crowd pleaser. Kids will like it too because it's so mild. You can add more herbs and spices if you'd like. I serve this with a green salad and some toasted garlic bread.

4. Completely Crockpot Spaghetti

I don't think there's an easier recipe in the world than this three ingredient wonder. I make this once a week during the busy fall season. Spaghetti sauce and meatballs cook to perfection; then I just stir in the spaghetti for the last 20-30 minutes. Dinner's ready!

5. Orange Curried Chicken

This is one of my husband's favorite recipes. If you like it spicy, add more curry powder about 10 minutes before serving, since the long cooking time of the slow cooker tends to mute flavors. This recipe is creamy, rich, and so delicious.

6. Crockpot Baked Beans and Meatballs

I came up with this recipe one day when thinking about my Pork Chops and Baked Beans recipe. And it's fabulous!

7. My Great-Grandmother's Stuffing

I always make a double batch of my Great-Grandmother's Stuffing every Thanksgiving. One batch goes into the turkey, and the other is made in the slow cooker. It's perfect; moist, tender, and full of apple and onion flavor. Yum.

8. Chicken Cacciatore

I love making this rich dish in the crockpot using chicken thighs. The meat is incredibly tender and it's so flavorful. Make sure that you taste the sauce before you serve it; you may want to add more Italian seasoning or red wine.

9. Crockpot Fajita Stew

Fajita stew takes the seasonings and ingredients used in Fajitas and cooks them to tender perfection in the slow cooker. This rich and intense stew is delicious topped with guacamole.

10. Apricot Chicken

This wonderful five ingredient recipe really packs in the flavor. Serve it over hot cooked rice or couscous along with a green vegetable and maybe some breadsticks.
