Top 10 Summer Pasta Recipes

Fresh and Clean

By , About.com Guide

Each season, I make a different type of pasta. I don't mean that I cook spaghetti in the winter or orzo in the summer, but there are certain toppings and preparations that are more appropriate for the hotter months. For instance, if I want spaghetti and meatballs (yes, even in the summer!) but don't want to stand over a pot of boiling water, Crockpot Spaghetti and Meatballs is for me. Fresh tomatoes and basil are perfect for no-cook sauces, and pasta salads, of course, are summer staples. Enjoy these quick and easy recipes for summer pasta.

6. Curried Chicken Salad

My husband insists that I make this salad at least once a week in the summer. And when it's gone, he's so sad! I probably use double the amount of curry powder, but then we do love curry. And I found a fabulous organic mango chutney at our co-op that makes this salad even better. If that's possible.

7. Tex Mex Pasta Salad

8. Chicken Melon Pasta Salad

This beautiful salad is sweet, juicy, tender, and savory all at the same time. Sweet cantaloupe is the perfect addition to creamy pasta and tender chicken. I could eat this salad for breakfast lunch and dinner in the summer months.

I don't think there's a simpler pasta dish on the planet. And if you make the pesto yourself, you will not believe how intensely flavorful this easy recipe is. I'm going to make some today!

And finally, this super simple three ingredient recipe (I love how symmetrical that is - three ingredients, three bean - get it?) is super fast and delicious. Use your favorite three bean salad recipe, buy a can of the wonderful stuff, or get it from the deli.
