Easiest Cookie Recipes

Cookies are beloved by all. Yet most recipes for cookies are time consuming. And exhausted people would rather buy a box of inferior cookies or pay a lot of money at a bakery than spend time in the kitchen. These super simple recipes for delicious cookies will change your mind. Some have only a few ingredients; others are ready in minutes and still others are make ahead, so you can keep them in the freezer and bake some when you want 'em. Yum.

1. Peanut Butter Sandwich Cookies

Hey, I like scratch baking as well as the next person, but there's nothing wrong with using a roll of refrigerated cookie dough every once in a while. Especially when it's dressed up with my favorite chocolate-peanut butter mixture.

2. Skinny Mint Cookies

Make your own Thin Mints! This simple recipe uses three kinds of chocolate: semisweet and milk chocolate chips, and chocolate peppermint candies. You melt 'em all together and dip plain chocolate wafer cookies in the mixture. They are simply fabulous.

3. Graham Cracker Sandwiches

This is my fallback recipe when I need something sweet. All you do is make a simple frosting and sandwich together two graham crackers. You could also use chocolate or vanilla wafer cookies. They're perfect for a last minute snack.

4. Special Kay Bars

There are a lot of different variations of this recipe floating around. This one is the best because it uses a lot of peanut butter and has the most perfect frosting. And it's so simple to make! You can cut this into bars in about 1 hour.

5. Cookie Brittle

This simple recipe is for a shortbread dough filled with chocolate chips that is pressed into a jelly roll pan and baked. The cookies are crisp enough to break into irregular pieces. They taste like a chocolate chip cookie to the tenth power!

6. Easy Fancy Cookies

Easy But Fancy Cookies
Linda Larsen
This fabulous recipe is so old I don't remember where it came from. They're tender, crisp, and melting with the most perfect texture. Use your mixer and you'll have the dough ready in about 10 minutes, start to finish. Store the dough, well wrapped, in the freezer and you can slice and bake these perfect cookies and eat them in about 18 minutes.

7. Brown Sugar Shortbread

All you need for this cookie recipe is flour, brown sugar, and butter. That is really it! And it makes a delicious and tender shortbread cookie in minutes. You could dress it up by adding chocolate chips, M&M candies, or nuts, but it's really perfect as-is.

8. Chocolate Peanut Butter Creams

A sweetened peanut butter mixture is sandwiched between vanilla wafers, then the cookie sandwiches are dipped into melted chocolate. This fabulous cookie looks (and tastes) like something from a fancy bakery.

9. Peanut Butter Marshmallow Treats

Peanut butter and peanut butter cups take regular old Marshmallow Treats to the next level. You could even frost these with this mixture: melt 12 ounce package semisweet chocolate chips with 1/2 cup peanut butter, mix well, and pour over the bars. Heaven on a plate.

10. Pecan Praline Cookies

Another slice and bake cookie recipe! This one is rich with tons of brown sugar. The cookies really do taste like a pecan praline, but they are much, much easier to make.
