Pork tenderloin is a wonderful cut of meat. It's boneless, lean, and can be transformed into many recipes using just about every ingredient in the pantry or fridge. It grills beautifully, can be roasted, or quickly pan fried. You can find many versions already marinated, prepackaged in the supermarket, but it's fun to buy plain tenderloin and marinate it yourself. Just be sure not to overcook this tender meat. Pork can be cooked to medium, or 155 degrees F, and be perfectly safe. Just slightly pink in the middle makes the meat very juicy and fork-tender. Enjoy these easy recipes!

1. Lemon Thyme Pork Tenderloin

This super easy recipe combines tart lemon with lemony-scented thyme and garlic for a juicy and flavorful main dish. You can use this marinade for chicken or for pork roasts too.

If you love mustard, make an easy sauce from the pan drippings by placing the roasting pan on a burner over medium heat. Deglaze the pan with some chicken broth, then stir in a tablespoon or two of cream and a couple of tablespoons of mustard. Stir, pour, and enjoy.
