This casserole is everything you love about garlicky shrimp scampi in the form of a creamy stuffed shells dish. Start by making a classic shrimp scampi, but with chopped shrimp so it can be easily stuffed into the cooked jumbo pasta shells.

Traditional shrimp scampi can be made from scratch using butter, onion, garlic, red pepper flakes, shrimp, white wine and lemon juice. If you prefer to make the scampi without white wine you can either substitute the equivalent amount of chicken stock or increase the amount of lemon in the dish.

This scampi dish is then mixed with cheese to make the filling for the stuffed shells. The shells are topped with a white sauce and baked until golden and bubbly. It is a delicious meal the whole family will ask for over and over again!

Ingredients

Shells and Shrimp Scampi Filling:

  • 20 jumbo pasta shells

  • 2 tablespoons olive oil

  • 2 tablespoons salted butter

  • 1/2 cup minced onion

  • 3 minced garlic cloves

  • 1/2 teaspoon crushed red pepper flakes

  • 1 pound peeled, deveined and chopped shrimp

  • 1/4 cup white wine

  • 2 teaspoons freshly-squeezed lemon juice

  • 1/2 teaspoon salt

  • 1/2 teaspoon ground black pepper

  • 8 ounces room temperature cream cheese

  • 1 cup whole milk ricotta

  • 1/2 cup grated parmesan

  • 1 tablespoon chopped fresh parsley

  • 1 large egg

  • 3/4 cup shredded mozzarella cheese

Sauce:

  • 4 tablespoons salted butter

  • 2 tablespoons all purpose flour

  • 2 1/2 cups half and half

  • 1 tablespoon minced fresh parsley

  • 2 clove minced cloves garlic

  • 1/4 teaspoon salt

  • 1/4 teaspoon ground black pepper

  2. Bring a large pot of salted water to boil and cook the pasta shells until al dente according to package directions, then drain and set aside.

  3. In a large skillet over medium heat combine the oil and butter.

  4. Add the onion, garlic, and red pepper flakes. Cook until the onions are translucent, about 3 minutes.

  5. Add the shrimp and cook stirring for 1 to 2 minutes.

  6. Add the wine, lemon juice, 1/4 teaspoon salt and 1/4 teaspoon pepper. Sir and simmer until the shrimp is cooked through, about one minute more. Set aside to cool.

  7. In a large mixing bowl combine the cream cheese, ricotta, Parmesan, parsley, egg, and the remaining 1/4 teaspoon salt and 1/4 teaspoon pepper.

  8. Fold in the cooled shrimp scampi and set aside. Preheat the oven to 375 F.

  9. In a large skillet over medium heat, melt the 4 tablespoons of butter and sprinkle with the flour.

  10. Cook, whisking, until the roux turns golden brown, about 3 to 4 minutes. Pour in the half and half, about 1/2 cup at a time, whisking constantly.

  11. Whisk in the remaining half and half and cook until thickened.

  12. Add the parsley, garlic, the 1/4 teaspoon of salt and the 1/4 teaspoon pepper. Set aside.

  13. Spread 1 cup of the sauce on the bottom of a 2 quart baking dish.

  14. Use a spoon to fill each of the cooked jumbo shells with the shrimp and cheese mixture.

  15. Line the stuffed shells in the baking dish. Spoon the remaining sauce on top.

  16. Sprinkle with the shredded mozzarella cheese. Bake, uncovered until bubbly and hot, about 25 minutes.
