Fajitas really became popular in the 1980s when flank steak appeared in markets. This slightly tough but flavorful steak is best cooked, then sliced into thin strips against the grain. Fajitas are a cross between a burrito and a soft taco. Strips of seasoned meat are rolled in tortillas with cooked bell pepper strips and everything from cheese to guacamole to salsa to sour cream. My homemade Fajita Seasoning Mix is essential to three of these fajita recipes. If you make lots of Tex Mex food, it's a fabulous recipe to keep on hand. Now try some fajita magic yourself for dinner tonight!
1. Steak Fajitas
You can certainly use flank steak for this recipe, but for the fastest recipe use ribeye or sirloin steak that doesn't need marinating. If you use flank steak, marinate the meat overnight in a mixture of 1 tablespoon Fajita Seasoning Mix, 2 tablespoons oil, and 2 tablespoons lime juice. Whatever steak you use, this recipe is sure to satisfy.
2. Shrimp Fajitas
Shrimp fajitas can be made with cooked or raw shrimp. Just toss the little guys in Fajita Seasoning Mix and cook the already cooked shrimp for a minute until warm, and cook the raw shrimp 2-4 minutes until they turn pink. This fajita recipe doesn't use cheese, but you can certainly add it if you want.
3. Surf 'n Turf Fajitas
What's better than steak with shrimp? Nothing, unless you're a vegetarian I guess. This excellent recipe is super easy and impressive. It would be perfect for a cookout, especially for Labor Day or another summer holiday.
4. Chicken Fajitas
This recipe, using seasoned chicken thighs, tastes complicated and delicious but is easy to make. You could use chicken breasts if you'd like; just cook them for a shorter period of time until done. And pork tenderloin or pork chops would also be fabulous using this combination of flavors and textures.
5. Egg Fajitas
Try these fajitas for breakfast to wake up your taste buds! You can omit the sausage or use vegetarian sausage crumbles to make this a vegetarian recipe. Yum.
