Fish sandwiches are a great idea for Sunday night lunch. They're a little lighter than traditional sandwiches. The combination of hot and crisp fish fillets with cold tartar sauce, ripe tomatoes and a toasted bun is really delicious.
5. Turkey and Cranberry Sandwiches
Hey, it doesn't have to be Thanksgiving to make these sandwiches! They're perfect any time of the year. I love how the tart cranberry sauce brings out the flavor of the melted cheese and tender turkey. You could certainly used cooked chicken if you'd like.
6. Grilled New Cuban Sandwiches
A combination of roast pork and ham, plus lots of melted cheese and pickle, makes these sandwiches really special. Grill them until the cheese melts and everything melds into a wonderful sandwich.
7. Chicken Focaccia Sandwich
This sandwich is a bit of a twist. Instead of a hot filling on a bun, it's a cold filling in hot bread. The bread is made from pizza dough, topped with oil, garlic, and herbs like focaccia. This is one of my favorite andwiches, and sure to be welcome at any spread.
8. Tuscan Chicken Crockpot Sandwiches
This filling for these fabulous sandwiches is made in the crockpot. Chicken thighs are cooked until they fall apart and are then combined with tomato, pesto, and mayonnaise, then contained between slices of focaccia.
9. Bacon Crisp Sandwiches
This sandwich, from one of my cookbooks, takes bacon to a whole new level. The bacon is microwaved after being dipped in Parmesan cheese, then made into a fabulous sandwich with bread, mayo, and tomatoes.
10. Toasted Caramelized Onion Sandwiches
And finally, in a nod to Betsy's father, this is a variation on the onion sandwiches he served. He used raw onion, thinly sliced, on buttered bread with salt and pepper. I like my onions caramelized, served with some melted cheese.
