Make this excellent skillet recipe using leftover Thanksgiving turkey and just four other ingredients. And please remember to season to taste. You're not locked into the amount of seasonings in any one recipe. If you like milder food, use less curry. If you like more spice, use more. You can also add more ingredients.

Ingredients:
- 1 onion, chopped
- 1/3 cup butter
- 1 Granny Smith apple, chopped
- 1/3 cup flour
- 1 tablespoon curry powder
- 1/2 tsp. salt
- 1/8 tsp. white pepper
- 3 cups turkey or chicken broth
- 3 cups cooked cubed turkey (or chicken!)
- 8 oz. can pineapple tidbits, drained
Preparation:
In a large skillet cook onion in butter until soft, about 5 minutes. Add apple; cook and stir for 2 minutes longer.
Sprinkle in flour, curry powder, salt, and pepper. Cook and stir for 2 minutes. Add broth and cook over low heat, stirring constantly until thickened. Add turkey and pineapple and heat until mixture is hot. Serve over hot rice with desired curry accompaniments (chutney, chopped nuts, toasted coconut).
