Ingredients:
- 6 slices bacon
- 1 (1-1/2 pound) turkey tenderloin
- Salt and pepper to taste
Preparation:
Preheat oven to 400 degrees F. Partially cook the bacon in a large skillet until some of the fat is rendered. Drain the bacon on paper towels for a few minutes.
Then sprinkle the tenderloin with salt and pepper to taste. Wrap the bacon around the tenderloin crosswise; fasten with toothpicks.
Place a wire rack in a roasting pan and place the turkey on the rack.
Roast for 40-45 minutes until the turkey registers 160 degrees F. Cover pan with foil and let stand for 10 minutes. Then slice the turkey into slices to serve, cutting each slice so it is wrapped with a piece of bacon. Discard toothpicks and serve. Serves 6
