Cashew Stir Fry

Use leftover turkey or chicken in this easy stir fry recipe just for two. Cashew Turkey Stir-Fry is a quick and easy recipe for using Thanksgiving leftovers too.

Prep Time: 15 minutes

Cook Time: 15 minutes

Ingredients:

  • 1 grilled Turkey Tenderloin or 2 cups chopped cooked turkey
  • 1/4 cup orange juice
  • 2 tsp. cornstarch
  • 1 Tbsp. honey
  • 1 Tbsp. oil
  • 1 small onion, finely chopped
  • 1 garlic clove, minced
  • 1 cup baby carrots
  • 1/2 cup cashew pieces

Preparation:

Cut tenderloin into 1" chunks and set aside. Combine orange juice, cornstarch and honey in a small bowl and mix well. Heat oil in a large nonstick skillet. Add onion and garlic and stir fry over medium high heat for 4-5 minutes until onion is crisp-tender.

Add carrots and cover. Cook for 4 minutes longer until carrots are crisp tender, stirring occasionally. Add turkey and orange juice mixture. Cook and stir for 2-3 minutes or until turkey is heated and sauce is thickened and bubbly. Add cashews. Serves 2

This recipe easily doubles to serve 4.
