Crockpot Onion Turkey with Stuffing

This simple five ingredient turkey and stuffing recipe that cooks in your crockpot is a good Thanksgiving dinner for a small gathering.

Prep Time: 20 minutes

Cook Time: 6 hours

Total Time: 6 hours, 20 minutes

Ingredients:

  • 1 Tbsp. olive oil
  • 1 onion, chopped
  • 2 Tbsp. apple jelly
  • 6 oz. pkg. turkey flavor stuffing mix (one step brand)
  • 3/4 cup water
  • 2 lb. boneless, skinless turkey breast half
  • salt and pepper to taste

Preparation:

Heat oil in large skillet. Add onion and cook for 5 minutes until light brown, stirring frequently. Add jelly and heat for 1 minute longer or until golden brown.

Spray a 4-6 quart slow cooker with nonstick cooking spray. Place stuffing mix in prepared cooker. Drizzle with water and mix gently. Sprinkle turkey with salt and pepper and place on stuffing mix. Spoon onion mixture over turkey and spread evenly.

Cover and cook on low for 5-6 hours. Serves 5

I prepared this on Thanksgiving for my husband and I. As it was cooking in the slow cooker, I was a little worried because I saw that it was bubbling and a little more liquidy(for the stuffing) than I thought it would be. But after we took it out of the pot to cut and serve, we saw how tender the turkey was and that the stuffing worked as a gravy / stuffing. My husband is not a big fan of turkey, but helped himself to seconds of this yummy dish!!!
