Roasted Herb Turkey Breast

Herb Roasted Turkey Breast is an easy recipe for Thanksgiving or anytime.

Prep Time: 15 minutes

Cook Time: 2 hours

Ingredients:

  • 1 bone-in, skin on turkey breast (4-6 pounds)
  • 1/2 cup chopped parsley
  • 1/3 cup chopped fresh basil
  • 2 tablespoons fresh thyme leaves
  • 3 tablespoons butter
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 cup chicken broth

Preparation:

Preheat oven to 350 degrees F. Place turkey breast in roasting pan. Gently loosen skin from flesh.

In food processor, combine parsley, basil, thyme, butter, salt, and pepper; process until a paste forms. Rub most of this paste under the skin; smooth skin back over turkey. Rub rest of paste on skin.

Pour chicken broth into roasting pan. Roast turkey, uncovered, for 2 to 2-1/2 hours or until meat thermometer registers 160 degrees F. Cover and let stand for 10 minutes, then carve to serve. Serves 6
