Ingredients:
- 1 bone-in, skin on turkey breast (4-6 pounds)
- 1/2 cup chopped parsley
- 1/3 cup chopped fresh basil
- 2 tablespoons fresh thyme leaves
- 3 tablespoons butter
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 1 cup chicken broth
Preparation:
In food processor, combine parsley, basil, thyme, butter, salt, and pepper; process until a paste forms. Rub most of this paste under the skin; smooth skin back over turkey. Rub rest of paste on skin.
Pour chicken broth into roasting pan. Roast turkey, uncovered, for 2 to 2-1/2 hours or until meat thermometer registers 160 degrees F. Cover and let stand for 10 minutes, then carve to serve. Serves 6
