Thai Turkey Packets

This simple recipe is full of flavor. You can also use chicken breast slices instead of the turkey if you'd like.

Prep Time: 15 minutes

Cook Time: 20 minutes

Ingredients:

  • 1-1/4 lbs. turkey breast tenderloins
  • 3 cups julienned carrots and cabbage mix OR 1 cup shredded carrots and 2 cups shredded cabbage
  • 1 cup salsa
  • 1/3 cup chunky peanut butter
  • 2 Tbsp. honey
  • 2 Tbsp. orange juice
  • 2 Tbsp. water
  • 1 Tbsp. soy sauce
  • 2 cloves garlic, minced
  • 1/4 tsp. ground ginger
  • dash white pepper

Preparation:

Prepare and preheat grill. Cut tenderloins crosswise into 3/4" slices. Divide evenly among 4 (12" x 18") sheets of heavy-duty aluminum foil. Top each with equal amounts of carrot mixture. Mix remaining ingredients and pour over each packet. Seal with double folds.

Grill, covered, 6" inches from medium high coals for 15-20 minutes or until turkey is fully cooked and vegetables are tender, turning once and rearranging packets on grill.

You can also bake the packets in a preheated 450 degrees oven for 20-25 minutes or until done. Serves 4
