Roasted Chicken and Almonds

Serve this fabulously easy main dish chicken recipe with mashed potatoes for true comfort food.

Prep Time: 15 minutes

Cook Time: 2 hours

Total Time: 2 hours, 15 minutes

Ingredients:

  • 2 frying chickens, cut into serving pieces
  • 1 cup slivered almonds
  • 10 oz. can cream of mushroom soup
  • 10 oz. can cream of chicken soup
  • 10 oz. container refrigerated Alfredo sauce
  • 1/4 cup chicken broth or white wine
  • 1/2 cup grated Parmesan cheese, divided
  • 1 cup shredded Havarti cheese

Preparation:

Preheat oven to 350 degrees F. Place chicken in large roasting pan. Sprinkle with half the almonds. In large bowl, mix the cans of soup with Alfredo sauce and 1/4 cup broth or white wine, 1/4 cup Parmesan cheese, and Havarti cheese until blended. Pour over chicken. Sprinkle with remaining Parmesan cheese and remaining almonds. Bake at 350 degrees for 1-3/4 to 2 hours, until chicken is thoroughly cooked and the sauce is bubbling and starts to brown on top. Serve over hot cooked rice or pasta to soak up the sauce. 8 servings

This recipe is one of my go-to choices when I'm really busy. The recipe is very easy and fast to put together and the flavor is wonderful. I use an organic mushroom soup and golden cream of chicken soup and lots and lots of almonds. it's fabulous!
