Hot roll mix is called for in recipes such as cinnamon rolls, dinner rolls, and stew biscuits. The commercial mix comes in relatively small boxes, and it's pretty expensive. Plus it has emulsifiers and preservatives in it. Luckily, you can easily make your own for just pennies—and you'll know exactly what's in it.

This hot roll mix will keep, if thoroughly and tightly covered in an airtight container, in a dark, cool, dry place for about six months; you can freeze it for longer storage. The only concern is for the dry milk powder; you don't want that to go rancid.

About 3 to 4 cups of this homemade hot roll mix can be substituted for the commercial blend. Remember, this is a mix, not a bread recipe, so you must add 1 package of instant blend dry yeast to the recipe along with the mix every time you use it.

Ingredients

  • 5 pounds all-purpose flour

  • 1 1/2 cups sugar

  • 2 tablespoons salt

  • 1 1/2 cups instant nonfat dry milk

Steps to Make It

  1. Combine the flour, sugar, salt, and powdered milk in a large bowl and mix with a wire whisk to combine thoroughly.

  2. Place in a large airtight container and label with the date, contents, and instructions. Store in a dark, cool dry place and use within six months.

Recipe Tips

For most recipes, you'll use about 3 to 4 cups of this mix plus one (1/4-ounce) package instant dry yeast. Start with 3 cups of the mix and add enough water to form a soft or firm dough, according to the recipe. This recipe makes a large amount of mix; if you don't think you will use all of it within the 6 months, you can cut the recipe in half.

Powdered milk—also called dry milk—is either made from whole milk or nonfat milk. Powdered milk is milk that has been evaporated until it is dry. Instant nonfat dry milk is readily available at grocery stores and online.

Once you have this mix all made up and stored in your pantry, you will be able to whip up a batch of doughy treats in no time. Use this hot roll mix recipe for sticky and sweet traditional cinnamon rolls or a copycat version of the famous Cinnabon cinnamon roll. It is also ideal for making simple white bread rolls, buttery pan rolls, or cloverleaf rolls.

You can also use the hot roll mix to make a simple bread; try it as the base for an Amish white bread or round white bread. It also works well when making pizza dough.
