Quick Pumpernickel Bread

All the flavor in pumpernickel bread without all of the work! Hot roll mix is the basis for this easy recipe.

Prep Time: 15 minutes

Cook Time: 30 minutes

Ingredients:

  • 1 pkg. hot roll mix OR 4 cups Homemade Hot Roll Mix
  • 1 pkg. yeast, if using Homemade Hot Roll Mix
  • 3/4 cup medium rye flour
  • 1-1/2 tsp. caraway seed
  • 1/2 tsp. instant coffee granules
  • 1-1/4 cups warm water
  • 2 Tbsp. butter, melted
  • 1 egg
  • 1 egg yolk
  • 1 egg white, slightly beaten
  • 1/2 tsp. caraway seed

Preparation:

Grease cookie sheet. Combine flour mixture with yeast from foil packet, rye flour and 1-1/2 tsp. caraway seed and mix. Dissolve coffee granules in hot water. Add to flour mixture along with molasses, butter, egg and egg yolk. Beat until dough pulls away from sides of bowl. Knead on floured surface until smooth, about 5 miniutes. Cover dough with bowl and let rest 5 minutes.

Divide dough in half and form each into a 12" baguette shape. Place seam side down on prepared cookie sheet and let rise for 45 minutes, until light and doubled in size.

Preheat oven to 350 degrees. Cut three slashes in each loaf with a very sharp knife. Brush each loaf with egg white and sprinkle with 1/2 tsp. caraway seed. Bake at 350 degrees for 25-35 minutes until deep golden brown.
